It’s the end of 2024, and somehow, Arizona still doesn’t have any Michelin-starred restaurants. And it’s not because we don’t have top-notch chefs and restaurants worthy of this prestigious award, but because Michelin simply has not visited Arizona.

About the Chef’s Table Experience at Ambrogio15

Led by Michelin-starred chef Silvio Salmoiraghi of Ristorante Acquerello in Milan and executive chef Fabio Pizzigoni, Ambrogio15 honors Italian culinary traditions while incorporating modern innovation.

When I arrived for my seating one evening in October, I was surprised to learn that “modern innovation” meant that I would be taken on a culinary journey through the countries that have made up Salmoiraghi’s career, including Korea, Japan, Italy, and France. We would not just be eating pizza and pasta, but exploring true Italian fusion gastronomy.

As we sat around the table in the venue’s private dining room, we had a front-row seat to the expertly choreographed action in the kitchen—each dish was cooked à la minute (prepared to order), and each chef was quietly concentrating on his or her station. 

Each of the eight courses was beautifully executed without being overly fussy, plated to perfection while letting the individual ingredients shine:

  1. Cacio e pepe egg
  2. Hokkaido scallops with gazpacho and Osetra caviar
  3. Alaskan black cod with polenta and parsley
  4. Omelet with asparagus, pureed carrot, and wasabi 
  5. Lemon and vodka sorbet
  6. Filet mignon with mushroom and beef jus 
  7. Pasta with spring onion and guanciale (an Italian salt-cured meat)
  8. Assortment of homemade pastries

You can also add adult beverages in the form of wine or cocktail pairings. The wines come from small, organic wineries and were chosen to capture the essence of their terroir, while the specific craft cocktails were selected to complement and enhance the nuanced flavors of the menu.  

My favorite dishes included the delicate cacio e pepe egg, melt-in-your-mouth black cod, the lemon and vodka sorbet I wanted to drink by the gallon, and the al dente pasta that delighted my taste buds. Though not usually a fan of fancy restaurant desserts, I was wowed by the platter of homemade pastries, each more delectable than the last. It was the perfect ending to a meal steeped in culinary artistry that I won’t soon forget.

Book the experience for yourself

The Chef’s Table experience is offered every night but must be reserved at least 72 hours in advance. You can book your reservation anytime between 5 p.m. and 8 p.m., and dinner will last approximately three hours. A full vegan menu is available upon request, and any allergies or dietary restrictions can be accommodated with 48 hours’ notice. The cost is $149 per person, and the cocktail or wine pairing is an additional $99.
